1 large eggplant
Olive oil
Oregano
1/2 cup tomato sauce
1/2 cup grated cheese (Swiss, Mozzarella, Parmesan, Cheddar, or mixture)

Directions:
Directions:
Preheat oven to 375 degrees. Wash eggplant but do not peel. Trim ends and cut in 1/2" rounds. Arrange slices on lightly oiled baking sheet. Brush tops with oil and sprinkle them with oregano. Bake in lower part of oven 15-20 minutes until soft but not mushy. Remove from oven. Spread each slice with tomato sauce, sprinkle with cheese, and dribble a little oil on top. Place under broiler for a minute or two until lightly brown.
