1 c mashed potatoes (with butter and milk)
1 can (6 oz) salmon, drained, skin and bones removed
1/4 c chopped onion
3 saltine crackers, crushed
1 tbsp minced fresh parsley
1/8 tsp salt
1/8 tsp pepper
1 egg, separated
2 tbsp vegetable oil

Directions:
Directions:
In a medium bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well. Beat egg white until stiff peaks form; fold into salmon mixture. Shape into six patties. Heat oil in skillet; fry patties over medium for 3-4 minutes per side or until lightly browned.
