2 egg whites
1/4 tsp cream of tartar
3/4 c sugar
1/8 tsp vanilla
2 to 6 drops green food coloring, optional
1 package (10 oz) mint chocolate chips

Directions:
Directions:
Lightly grease baking sheets or line with parchment paper; set aside. In a mixing bowl, beat egg whites until foamy. Add cream of tartar, beating until soft peaks form. Gradually beat in sugar, 1 tbsp at a time, until stiff peaks form. Beat in vanilla and food coloring if desired. Fold in the chocolate chips.
Drop by rounded tablespoons 2 inches apart onto prepared baking sheets. Bake at 250º for 30-35 minutes or until dry to the touch. Remove to wire racks to cool. Store in an airtight container.

This recipe is Julia's specialty.
If you don't have mint chocolate chips, add 1/4 teaspoon peppermint extract at the same time as the vanilla. You could also use different colored food coloring and different extracts.
