Ingredients: 2 packages unseasoned croutons 16 oz chicken broth (canned or homemade) 12 eggs, beaten 6 stalks celery, chopped 2 white onions, chopped 6 carrots, peeled and chopped 1 1/2 lbs. hot Italian sausage, removed from casing 1 cup grated locatelli cheese salt pepper 1/2 cup fresh chopped flat leaf parsley 1 stick butter evoo

Directions:In a large frying pan, cook the sausage in about 3 tbsp evoo till browned, but not dry. Add the butter, carrots, celery and onion. Cook till translucent. Place croutons in a very large bowl or pan and add the sautéed ingredients. Cool slightly. Add the cheese, salt (not too much) and the pepper. Mix well. Add the eggs with a little of the broth. Mix with your hands--keep adding the broth until the mixture is completely combined. It will be on the wet side. Add the parsley Preheat oven to 375º Grease a large roasting pan with evoo Spoon in the stuffing and top with several "pats" of butter Cover with foil and bake for 30 minutes. Remove foil and continue baking till knife inserted in center comes out clean.. DON'T OVER BAKE. Cut into squares and serve |

Notes: I make this on Thanksgiving--it is always everyone's favorite. My family seems to like it better than the turkey. You can make this all year long. Cut the recipe in half and whip it up anytime. It gets even better the next day with a little homemade gravy on top
