1 lb elbow macroni, cooked al dente and cooled slightly
4 carrots, diced
1 small white onion, grated with juice
4 stalks celery, diced
3 hard boiled eggs, chopped
salt
pepper
dash of cayenne pepper
3/4 cup Hellmans Mayo
2 tbsp spicy brown mustard
paprika for garnish
fresh parsley for garnish

Directions:
Directions:
Mix all ingredients except mayo, mustard, paprika and parsley. Taste for proper seasoning. Add mayo and mustard (more or less to taste). Top with paprika and a sprig or two of parsley for presentation.

Great in the summer for a cook out---but we love it all year long. It's one of our favorite sides. To kick it up a notch---add some albacore tuna, finely diced. This is one of my nephew Jakes' favorite things to eat---he requests this as a side with just about everything.
