1/2 c. mayo
2 T. frozen apple juice concentrate
1/2 t. ground cinnamon
2 large red apples (about 4 c. cubed)
1/2 c. seedless red grapes, halved
1/2 c. chopped celery (1 med. stalk)
1/2c. chopped walnuts (carmalized)
4 c. fresh spinach leaves

Directions:
Directions:
Mix Mayo, juice concentrate, and cinnomon well. Combine all other ingredients except spinach. Mix together. Add spinach just before serving.

To carmalize walnuts melt together 1/4 c. brown sugar and 2 T. butter. Add nuts and mix all togeter till just barely melted. Spread on a sprayed pan to cool.
