1 unbaked pie shell-freshly made or bought
1 ripe tomato
4 slices of bacon
1 tablespoon flour
2-4 oz. of cheddar cheese grated
2 oz. sliced fresh or canned mushrooms (optional)
1/2 head of lettuce, shredded
2 tablespoons chopped onion

Directions:
Directions:
Preheat oven to 350 degrees.
Precook bacon slices and set aside to cool.
Spread tablespoon of flour over bottom of pie shell. Sprinkle chopped onion over that. Slice the tomato in thin slices and place over the flour until entire pie shell is covered. If mushrooms are desired, place mushrooms over the slices of tomato. Take cooked bacon slices and either cut, chop, or crumble into desired bite size. Cover with grated cheddar cheese and pop into the oven. Cook (about 20 minutes) until the pie shell is fully cooked. Remove from the oven, let cook. When ready to serve, top with shredded lettuce; lightly salt and serve.
