1 c wild rice 1 c brown rice
1 c dried cherries 1/4 c olive oil
1/2 c pine nuts, toasted 1/4 c chopped parsley
2 tbsp orange zest 2 tbsp orange juice
salt and pepper grated Parmesan cheese

Directions:
Directions:
Preheat oven to 350º. Bring 3 cups water to boil in medium sauce pan. Add wild rice, stir, reduce heat. Cover, simmer for 35 minutes. Drain rice.
Bring 2 cups water to boil. Add brown rice, stir, reduce heat. Cover, simmer 20 minutes. Water should be absorbed. Combine rice with everything except the cheese, toss. In oven proof casserole dish, cover, and bake 20-30 minutes. Till soft, but not mushy and heated through. Sprinkle with cheese and serve.
