1 1/4 c flour
1 c quick cooking oats
1/2 c sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 egg whites
1/2 c water
1/3 c vegetable oil
1 c fresh or frozen blueberries
Topping:
2 tbsp sugar
1/4 tsp cinnamon

Directions:
Directions:
In a bowl, combine the first six ingredients. In another bowl, beat egg whites, water and oil. Stir into dry ingredients just until moistened. Fold in blueberries. Fill paper-lined muffin cups or muffin cups coated with cooking spray 3/4 full. Combine sugar and cinnamon and sprinkle on muffins. Bake at 400º for 18-22 minutes.
