3 lb.pared potatoes (about 9 medium-red skinned work well) cooked
1 1/2 cup sour cream (can use part yogurt)
4 T. butter
1/2 tes. salt
1/4 tes. pepper
Directions:
Directions:
Beat hot potatoes with electric mixer until light and fluffy.Add remaining ingredients and continue to beat. Put in buttered 2 quart casserole. Cover and refrigerate overnight. Process in microwave for 15 min. on medium heat, turning every 5 minutes. Bake uncovered in 325º F. oven for 30 min.
Cover if browning occurs.
