5 lb. Chuck or Arm Roast of Beef (smaller roasts dry out more)

Directions:
Directions:
1. Wipe meat with damp cloth or paper towel.
2. Rub with seasonings, if desired.
3. Place on roasting rack in shallow pan.
4. Don't cover.
5. Roast at 250บ about 36 minutes per pound--or to an internal temperature of 155บ for medium rare (meat is more tender if slightly on the rare side).
