3 T maragrine or butter
3 T all purpose flour
4 c low fat milk
12 oz sharp cheddar cheese
1 lb elbow macroni
salt & pepper

Preheat oven to 350 degrees.
Place a large 6 qt pot of water on to boil.
Slice or shredd cheddar cheese.

Melt butter in a 3 qt sauce pan. Add flour and stir/whisk over medium to low heat to combine into a paste (roux). Cook for 2 min until golden in color. Add milk in small amounts (1/2 c) at a time whisking to smooth as mixture thickens. Add remaining milk and simmer on medium low heat.

Add shredded cheese to milk mixture. Stir over medium heat until sauce thickens and cheese is melted. Add fresh ground pepper.

In the meantime, precook macaroni pasta in 6 qt of boiling water until just el dente (tough to the bite). Drain pasta and add to a 4 qt casserole dish. Pour cheese sauce over the pasta and mix. Top casserole with remaining cheese and bake in a 350 degree oven for 30-40 min or until cheese is golden brown and bubbling.
