4 Large Tomatoes, preferably plum or vine grown
2-3 yellow chillies, depending on spice sensitivity
1-2 serranos or 1 jalapeno
2 small cloves of garlic, whole
fresh cilantro
salt and pepper to taste

Directions:
Directions:
Wash the tomatoes, chillies and pat dry. Heat a medium fry
pan, add a small amount of cooking oil (1-2 T). When hot add
the tomatoes, chillies and garlic, pan roasting till charred and
done. Remove the tomatoes to a blender container. Remove
the seeds from the chillies center by slicing and scraping them
out, add the chillies to the blender container along with the
garlic. Add a small sprig of fresh cilantro and pulse blend to a
consistency that pleases you. Adjust the salsa to taste with
salt and ground black pepper. Serve warm or cool in a bowl
garnished with some coarsely chopped cilantro. Serve with
home prepared fried tortillas strips and guacomole!
