6 medium potatoes (peeled),
1 small onion,
2-3 eggs,
3 T. potatoe starch (found in the Jewish section at most grocery stores),
oil or cooking spray for frying,
salt and pepper (to taste)

Directions:
Directions:
Grate raw, peeled potatoes and onions. Drain in colander or strainer to remove liquid. Mix in eggs and other ingredients. Fry in hot oil, dropping by tablespoonfuls and flattening into pancakes. Brown on both sides. Place on paper towels to absorb excess oil. Serve hot. Delicious with applesauce, sour cream, or sprinkeld with sugar.
