1, 3 oz. pkg. lemon JelloŠ
1 1/4 c. boiling water
3 Tbsp. lemon juice
2/3 c. sugar
Pinch of salt
Grated rind of two lemons

1 can chilled (24 hours) CarnationŠ milk

1 c. crushed vanilla wafers, divided

Directions:
Directions:
Mix JelloŠ and boiling water--allow to thicken slightly. Take chilled milk & whip until stiff. Add JelloŠ mixture, lemon juice, sugar, salt, & grated rind. Sprinkle 1/2 c. vanilla wafer crumbs in bottom of 9" x 13" pan, add cream & JelloŠ mixture over crumbs, then top with remaining crumbs.

Chill until firm.

A delicious dessert that Mom loved because of it's light texture and cool flavor. We were both lemon lovers so we always traded recipes that had lemon ingredients.
