3 potatoes, peeled and chopped
1/2 onion peeled and chopped
celery if available
2 c. water
3/4 tsp. salt
1/3 c. butter
1/2 c. flour
2 c. half & half cream
grated cheese

Directions:
Directions:
Bring water and salt to boil. Add vegetables, cover and simmer for 10 minutes. Combine butter and flour until it makes a paste. Add half & half to vegetables, stir. Stir in flour and butter mixture, boil for 2 minutes. Serve with grated cheese.
