3/4 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup mashed ripe bananas (about 2 large)
3/4 tsp grated lemon rind ( I use lemon Juice)
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts (I use pecans)

Directions:

Heat oven to 325 degrees. In a large mixer bowl, beat together sugar, vegetable oil and eggs. Stir in bananas and lemon rind. Sift together flour, baking soda and salt: add to banana mixture and stir until combined. Fold in nuts. Pour into a well-greased 9x5x3 inch loaf pan and bake for 50 to 60 minutes or until tests done. Remove from pan let it cool then enjoy.
