1 head green leaf lettuce
1 avocado, peeled and chopped
2 tomatoes, chopped
1/3 c. pine nuts, toasted
1/4 c. alfalfa sprouts
1/4 c. minced red onion
1/4 c. grated mozzarella cheese
2 Tbs. white wine vinegar
1 1/2 Tbs. Dijon mustard
6 Tbs. olive oil
salt and pepper to taste

1. Tear lettuce into large bowl.
2. Add avocado, tomatoes, pine nuts, alfalfa
sprouts, red onion and mozzarella cheese.
3. Whisk vinegar and mustard. Gradually whisk in
oil. Season with salt and pepper.
4. Pour 1/3 c. dressing over salad and toss.
5. Serve, passing remaining dressing.
