1 1/2 Tbs. lime juice
1 1/2 Tbs. Dijon mustard
1/2 tsp. salt
pepper to taste
1/3 c. olive or salad oil
1 (14 oz.) can hearts of palm, drained and cut into 1" pieces
lettuce
avocado slices
1/2 fresh pink grapefruit, cut into sections

Directions:
Directions:
1. Combine lime juice, mustard, salt and pepper.
Whisk.
2. Add oil in a stream, whisking constantly until
dressing is thick.
3. Add hearts of palm and marinate several hours
or overnight.
4. Toss with lettuce and avocado slices. Decorate
with grapefruit slices.
