7 T cornstarch
1/4 tsp salt
3 egg yolks
1/2 c lemon juice
1 1/2 c sugar
1 1/2 c hot water
2 T butter

Directions:
Directions:
Mix cornstarch, sugar & salt thoroughly in saucepan. Add hot water and cook over high heat, stirring constantly until thick and clear. Remove from stove & add add beaten egg yolks. Return to stove cook at low heat stirring constantly for six minutes. Take off stove & add lemon juice & butter. Cool. Pour into booled baked pastry shell.

Merringue
3 egg whites
6 T sugar
1/4 tsp cream of tartar
1/4 tsp lemon extract

Beat egg white & cream of tartar until stiff. Gradually add sugar spread on pie. Bake 400º until golden brown
