2 lbs. ground beef
1 can chili beans
1 can enchilada sauce
1 small onion, chopped
flour tortillas
shredded cheese (cheddar or colby)

Directions:
Directions:
Saute onions in 1 Tbsp. oil. Set aside. Brown ground beef in skillet. Add onions. Add beans and enchilada sauce and heat. Place a layer of tortillas in a 13x9 pan. Place a layer of meat and then another layer of tortillas ending with the meat mixture. Cover with the cheese. Bake at 350 for 30 minutes or until bubbly and hot.
