2 c flour
1 tsp baking soda
½ tsp salt
1 ½ c sugar
2 tsp cinnamon
1 tsp vanilla
½ c safflower oil
¾ c milk
3 eggs, beaten
2 c pumpkin puree
1 c roasted piñon nuts

Directions:
Directions:
Preheat oven to 350°. Combine flour, baking soda, salt, sugar and cinnamon. In a large bowl, mix the eggs, milk, oil and vanilla; stir in the pumpkin and stir until well blended. Add the dry ingredients to the wet ingredients and mix well. Fold in the piñons. Bake in two 5X9 greased loaf pans for approximately 45 minutes. Cake should spring back when touched.
