1 -9 inch pie shell
2 eggs slightly beaten
2 cups canned or cooked pumpkin
3/4 cup sugar
1/2 teaspoon of salt
1 teaspoon of cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 2/3 cup (large can) evaporated milk

Directions:
Directions:
Beat eggs slightly and add pumpkin, sift sugar, salt & spices together and add to pumpkin mixture. Add milk and blend until creamy. Pour into a unbaked pie crust and bake in 425º oven for 15 minutes then turn oven down to 350º and bake for about 35 to 40 minutes or until knife inserted into center and comes out clean. Cook on rack and serve with or without whipping cream.
