1 cup buttermilk
1/3 cup maple syrup
1/4 cup lt. olive oil
2 eggs
1-1/2 cups flour
1/2 cup cornmeal
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup candied fruit (diced mixed fruit)

Directions:

Heat oven 400 deg.
Grease cupcake pan for 6 large muffins. Beat buttermilk, syrup, oil
And eggs in a large bowl. Stir in remaining ingredients, except diced
Fruit, stir until flour is moistened
Then fold in diced fruit.
Bake for 25min. Or until golden brown.
