1/2 pkg frozen mashed potatoes,
8oz sour cream,
1/4 lb. cooked bacon - crisp and crumbled,
1 c. shredded cheddar cheese,
chopped onion, (depends on if you like onions),
1 tbsp. butter,
salt & pepper

Directions:
Directions:
Cook mashed potatoes accordin to instructions on package. Add salt, pepper & butter. In 8x8" dish, spread half of potatoes, top with 1/2 of sour cream, sprinkle 1/2 of bacon, onion and cheese. Repeat layers - ending wth cheese. Bake 350 30-35 min.

You can also used left over mashed potatoes for this. To make a larger serving, just double the ingredients and bake in a 9x13" pan.
