1 large onion, chopped
2 c. carrots, chopped
3-4 c. potatoes, peeled and cubed
5 c. chicken broth
parsley
dill
salt
pepper
2 c. cheddar cheese, shredded

Directions:
Directions:
Cook veggies in broth until really tender. Add parsley to taste. Pour soup through strainer, saving broth. Put veggies in food processor or blender and puree until smooth, adding broth as needed to reach desired consistancy. Return soup to pot. Add dill, salt and pepper as desired. Stir in cheese until soup is smooth. Do not boil.
