1 1/2 lbs. assorted fresh vegetables, 1 envelope Savory Herb with Garlic or Ranch Soup Mix, 2 tablespoon olive oil.

1. Preheat oven to 450º F. In 13 x 9 baking or roasting pan, combine all ingredients until evenly coated.

2. Bake uncovered, stirring once, 20 minutes or until vegetables are tender.

Use any combination of the following: sliced zucchini, yellow squash, red, green, or yellow bell peppers, carrots, celery, onion and mushrooms.
