Fruit Sauce:
1/2 c. all-fruit preserves of choice
3/4 c. unsweetened apple juice
3/4 c. water

Pancakes:
1 1/2 c. rolled oats
1 c. whole-wheat flour
1 T. thawed apple juice concentrate
1 T. baking powder
1 1/2 tsp. vanilla extract
2 egg whites, lightly beaten
2 ripe bananas, mashed

Directions:
Directions:
To make fruit sauce: In a med. saucepan, stir all the ingredients together and bring to a boil. Reduce heat to low and simmer for 10 mins. or until reduced by half. Keep warm.

To make pancakes: In a med. bowl, combine the oats, flour, apple juice concentrate, and baking powder and blend thoroughly.

In another med. bowl, beat vanilla, egg whites, and bananas together. Stir the banana mixture into the flour mixture. Lightly coat a large skillet w/ butter spray and place over med. heat. When hot, drop the batter by heaping tablespoon or shape of choice and cook until it bubbles evenly on the surface.Turn and cook for about 1 min. on other side, until golden. Serve immediately with the warm fruit sauce and enjoy!
