1/2 c fresh lemon juice
5 garlic cloves minced
4 minced shallots
8 sprigs of thyme
2 tsp dried oregano
2 bay leaves
Two, 2 1/2 lb chickens-halved
2 tbsp freshly grated lemon zest
2 tspb coarse black pepper
dash of kosher salt

Directions:
Directions:
ºWhisk together in a large bowl the lemon juice, garlic, shallots, thyme, bay leaf, oregano and olive oil. Add the chicken and marinate for at least 2 hours.
Preheat the oven to 450F
Put the chicken skin side up, on a rack in a roasting pan. Sprinkle with pepper, lemon zest and salt. Roast in hot oven for 40 min. Remove from oven and let rest for 10 min. Serve with spinach.
