John's Grilled Rack of Lamb Recipe

2 packages of Rack of Lamb (we buy ours from Costco)
1/2 Olive oil
2 T.Balsamic vinegar
Fresh cracked pepper to taste
2 twigs of fresh (only fresh!) rosemary
2 minced garlic cloves

Directions:
Directions:
Mix marinade ingredients (olive oil, balsamic vinegar, pepper, rosemary, and garlic) and massage into meat. Cut racks in half (4 per piece for easier handling and massaging, but don't cut it down any more than that). Let it marinate for 1 1/2 hours before grilling.

Grill at about 400 degrees until done (medium to medium rare). John says it takes about 30 to 40 minutes to grill and to make sure you don't leave your lamb chops unattended because they catch on fire easily.

Let rest for 15 minutes before cutting rack. Serve with green mint jelly found at grocery store.
