- 1 box of Jiffy Corn Muffin mix (8.5 oz)
- 1 can (8 ¼ oz) of sweet corn cream style
- 1 egg
- ¼ cup of cream (heavy or light) or milk
- 1 fresh jalepenos seeded and chopped fine (take the membrane out too if you don’t want it too hot)
- ½ cup of shredded cheddar cheese or Mexican style mix shredded cheese

Preheat oven to 400 degrees. Butter a small pan, ceramic dish or a muffin pan. Works best in cast iron pan.
Combine all ingredients except cheese and stir together until all the flour have mixed in with the wet ingredients. The batter will be slightly lumpy. Stir in the cheese. Pour on to the pan and bake in the middle rack for about 15 minutes or until golden brown on top.
This is a great side dish served with Chili.
