- 4 precooked sausage patties or any of your favorite sausages (I like the Amy’s brand spicy chicken sausage with cilantro) chopped up small
- 4 eggs whisked
- 1 pkg of corn tortillas
- 1 jar of your favorite salsa
- Some hot sauce
- 1 package of shredded cheese (any kind you like)
- ˝ cup of preshredded hash brown potatoes (optional)
- Sour cream
- Cilantro chopped (optional)

- Heat up two pans on medium high. One small pan for warming the tortillas and the other such as skillet to cook the other items
- Warm the tortillas one at a time in a small pan and wrap the tortillas in a towel or foil to keep warm
- Heat up olive oil in the skillet and cook the sausage and the shredded potatoes
- When the sausage and potatoes are slightly brown then add the eggs and stir around the ingredients so it all combines. This will cook fast so you can turn off the heat immediately
- Serve the eggs and sausage mix in the tortilla and top with the cheese, salsa, hot sauce, sour cream and cilantro.
