3 lbs. red potatoes, leave whole with skin on and cook until done; chill completely, leaving skin on, and cut into approx. 1/2 inch cubes
7 hard boiled eggs, finely broken up
3-4 stalks of crisp celery, diced fine
1/2 smallish red onion, diced very fine
several sprigs of fresh dill
salt and pepper to taste
mayonnaise - to your liking; do not use light or fat free mayo for this - it completely alters the taste

Put the cubed potatoes, mashed up eggs, diced celery, and diced onion into a large bowl. Add salt and pepper and gently mix well. Add the amount of mayo that will minimally hold the salad together. Clean up the edges of the bowl for presentation. Cover the top of the potato salad with as much dill as you like - do not use the stems - just rip up the fine leaves.
