1 (10 ounce) package frozen chopped spinach.
2 (13 3/4 ounce) cans artichoke hearts
1/2 c. mayonnaise
1/2 c. sour cream
1 c. freshly grated Parmesan
1 c. grated monterey PEPPER jack cheese

Directions:
Directions:
Preheat the oven to 350º. Grease a casserole dish with non-stick spray.

Heat the spinach in a microwave oven on high 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop them. Combine all ingredients in a large bowl. Stir well. Scrape into the prepared casserole dish. Bake for 30 minutes. Serve with bagel chips or Triscuits.

Another option is to put the jack cheese on top instead of inside.
