1/2 cup shortening
1/2 cup margarine
2 cups sugar
5 eggs (room temperature), separated
1 cup buttermilk
1 tsp. baking soda
2 cups flour
1 tsp. vanilla
1 2/3 cups coconut

Directions:
Directions:
Blend shortening, margarine and sugar until creamy. Blend egg yolks into mixture. Add soda to buttermilk; stir buttermilk into egg mixture alternately with flour. Fold in beaten egg whites - add vanilla - fold in coconut. Bake in three 9 inch cake pans.
FROSTING:
1/2 cup margarine
8 oz. cream cheese
1 pound powdered sugar
1 tsp. vanilla
1 cup coconut
1 cup chopped nuts
Blend margarine and cream cheese. Add sugar and vanilla. Stir in coconut and nuts.
