Mrs. Noonan's Tortellini Salad Recipe

Ingredients:  
1 1/2 lbs. cheese filled tortellini (egg and spinach for color)
1 T. chopped Italian parsley
1 T. minced dill (I use dry)
2 T. basil (fresh or dry)
6 oz. prosciutto, shredded
2 roasted peppers (drained, out of jar), cut in strips
1/3 c. pine nuts
1 1/2 T. grated parmesan cheese

Dressing:
1/2 c. red wine vinegar
1 1/2 tsp. dijon mustard (Grey Poupon)
1 1/3 c. extra virgin olive oil
salt and pepper to taste

Directions:
Directions:
Cook cheese tortellini "al dente" and refresh with cold water - drain.

Dressing: In a large bowl combine:
1/2 c. red wine vinegar
1 1/2 tsp. dijon mustard (Grey Poupon)
1 1/3 c. extra virgin olive oil
salt and pepper to taste

Stir in:
1 T. chopped Italian parsley
1 T. minced dill (I use dry)
2 T. basil (fresh or dry)

Add:
The pasta
6 oz. prosciutto, shredded
2 roasted peppers (drained, out of jar OK), cut in strips
1/3 c. pine nuts
1 1/2 T. grated parmesan cheese

Toss and chill for at least an hour. If in cold weather bring to room temperature to melt olive oil which solidifies in cold.

Mrs. Noonan made this marvelous pasta salad for a school event long before such salads were in vogue. It has been a family favorite since first bite. I fact, the faculty working in the kitchen for this event sampled so much of it there was none left to serve!!
