1 pound fresh string beans, steamed to desired
to desired tenderness
1/2 cup diced tomato
1/2 cup diced cucumber
1/4 cup diced green bell peppers
1/4 cup diced onion
3 Tablespoons Dijon mustard
1 Tablespoon balsamic vinegar

1. In a large bowl, combine the string beans,
tomato, cucumber, bell pepper, and onoin.
2. In a cup combine the mustard and vinegar.
3. Pour the dressing over the vegetables and
mix well.
4. Chill in the refrigerator for 1 to 2 hours, to
allow flavors to develop, before serving.
Serves 6.
