8 to 10 small red potatoes, washed, and cut up
3 tablespoons, 2% milk
cup feta cheese
3 tablespoons minced fresh cilantro or 1 tablespoon dried cilantro
2 tablespoons chopped green onion
2 tablespoons finely chopped seeded jalapeno pepper
2 garlic cloves, minced
cup shredded cheddar cheese

Directions:
Directions:
Place the potatoes in a pan and cover with water. Bring to a boil. Reduce heat and cover and cook for 10-15 minutes until tender. Drain.

In a mixing bowl, mash potatoes with milk. Beat in the feta cheese, cilantro, onion, jalapeno, and garlic.

Spoon into a baking dish and sprinkle cheddar cheese over the top. Bake at 350 for 15-20 minutes until heated through.
