One Skillet Lasagna Recipe

1-¼ cup ricotta
¼ cup water
½ teaspoon salt
¼ cup grated parmesan
1-½ cups shredded mozzarella
½ small onion, diced
1 lb ground turkey or beef
3 cups fresh spinach
1 jar pasta sauce (26 oz)
6 to 8 oven ready lasagna noodles

In a medium bowl, mix ricotta, water, salt, parmesan & ½ cup mozzarella. Set aside.
Brown the meat in a large skillet set over medium high heat. Drain any fat, if needed. Add onion and any other desired cut veggies. Stir in 2 cups of the pasta sauce. Reduce heat to medium low.
Top the mixture with 2 lasagna noodles, set in the center. Break two additional lasagna noodles to fill in the edges. Gently spread the cheese mixture over the noodles. Layer the fresh spinach over the cheese. Lay two more lasagna noodles over the spinach break and additional one or two noodles to fill in edges again if necessary. Pour the remaining sauce on top of the noodles and spread it evenly, then sprinkle on the remaining cup of mozzarella.
Cover the skillet and simmer the lasagna over medium low heat until the noodles are tender, about 20 minutes. Remove the skillet from the heat and cool for 5 minutes. Cut into squares and serve.

I usually use a 12" cast iron skillet for this recipe. You can use a 10", but it might bubble over the sides just a little. Also, sometimes I put the pan under the broiler once it is finished in order to brown the top a little.
