1/4 cup butter
1 1/2 cups chopped onions
3 1/2 cups chicken broth
4 cups diced potatoes
1/2 tsp each: salt, garlic salt, celery salt
2 cups half-and-half cream (I use milk)
pepper to taste

Directions:
Directions:
Saute onions in butter until soft but not brown. Add i cup of the broth and simmer covered for 10 minutes. Add remaining broth, potatoes and salts. Cover and cook over low heat until potatoes are soft, 15 to 20 minutes. Cool. Pour mixture into blender in samll batches, blend until smooth. Stir in cream & Pepper. Mix well. Refrigerate for several hours or overnight. Serve cold.

I do not blend until smooth, I like some lumps. Also I like it to eat it hot.
