2 C Leftover mashed potatoes
1 egg (lightly beaten
1/3 C all purpose flour
Salt and pepper to taste

Mix all ingredients and if necessary to make a firm patty, you can add a little dab more flour.

Drop by large spoonfuls into hot oil or Crisco and fry until golden brown.

My kids all called these fried mashed potatoes or potato pancakes. I always made extra mashed potatoes so we could have these next day. Good in the morning with eggs too.
