"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
2 T. yeast
Approximately 8 c. bread flour
1 heaping c. sugar
1 tsp. vanilla sugar
1 tsp. salt
2 beaten eggs
2 1/4 c. hot (not boiling) water
1/2 c. oil

Directions:
Directions:
Place yeast in bowl with sugar and vanilla sugar. Add water and wait about 10 minutes until mixture has bubbled. Mix salt, eggs and oil together in small bowl. Add to water and sugar bowl. Gradually add flour, mixing well. You know you added enough flour when the dough doesn't stick to your fingers.

Place Challah in slightly oiled bowl and cover with a towel. Let the dough rise for approx. 2 hours until almost double in size. Divide dough into 4 equal pieces. Divide each quarter into 3 stands and braid. This makes 4 Challahs.

Place each Challah on a greased and floured cookie sheet. Brush the top of each Challah with a mixture of a beaten egg and 1 tsp. vanilla. Let rise for another 1 1/2 hours. Bake for about 30 mins. at 350 degrees. Enjoy!
