A. 1 oz. salt pork
2 oz. lean cured ham
1 T. vegetable oil
1 green pepper, seeded
3 sweet chili peppers, seeded
1 onion, peeled
2 clovers of garlic, peeled
B. 1 pound of lean beef
C. 2 hard cooked eggs
6 olives stuffed with pimentos (chopped)
2 T. seeded raisins
1 tsp. capers
1 tsp. salt
1 tsp. whole dried oregano
1/4 tsp. vinegar
3/4 c. tomato sauce
D. 1 can (1 lb) string beans, drained
E. 6 large ripe plantains (yellow)
F. vegetable oil for deep frying
G. 6 eggs
3/4 tsp. salt

Directions:
Directions:
Preheat oven to 350.

1. In heavy kettle, brown rapidly salt pork and ham. Reduce heat to low and sauté rest of ingredients included in A for 10 minutes, stirring occasionally.
2. Add meat and stir constantly over high heat until meat loses its red color. Reduce heat to low and add ingredients included in C. Cover and cook for 15 minutes.
3. Wash beans and bring to a boil in water and salt included in D. Reduce heat to moderate, cover and boil for 20 minutes. Drain, add to kettle and mix.
4. Peel plantains and cut each into 4 lengthwise slices.
5. In a kettle, heat oil included in F. Brown plantain slices on both sides. Remove and drain on absorbent paper.
6. Beat eggs until stiff, Add salt and beat again.

Assemble the Pinion by arranging layers in a 13 x 9 x 2 inch glass baking dish as follows:
* half of the beaten eggs
* 1/3 of plantain slices
* half of the meat mixture
* 1/3 of plantain slices
* remainder of the meat
* 1/3 of plantain slices
* remained of the beaten eggs
Place in preheated oven and bake for about 30 minutes or until egg is set and golden brown.
Do not unmold. Serve in baking dish.
