Ingredients: 1 medium onion, thinly sliced 2 medium zucchini, sliced 1/4 cup grated Parmesan cheese 1/2 tsp. dried thyme leaves 1 clove garlic, minced Dash pepper 2 T. butter, cut into pieces 2 medium tomatoes, quartered

Directions:On a large sheet of heavy-duty foil, layer the onion and zucchini slices. Sprinkle with cheese. Season with thyme, garlic, and pepper. Dot top with butter pieces. Bring the four corners of the foil together in a pyramid shape, folding and sealing ends to form a package. Seal foil loosely to allow for heat circulation and expansion.
Place on grill over medium coals and cook for 20 minutes. Open foil package and arrange tomato quarters on top. Reseal and continue to grill an additional 20 to 30 minutes or until vegetables are done to your desire and tomatoes are heated through. |

Notes: For convenience, this vegetable medley may be cooked in a 375º oven for 30 minutes. Add tomatoes and cook an additional 10 minutes. A variety of herbs such as basil, oregano, or Italian could also be used for a different flavor.
