1 1/2 flour
1 c sugar
3/4 tsp salt
1/2 tsp baking soda
1/8 tsp cinnamon
2 eggs
1/2 c vegetable oil
1/2 tsp vanilla
1 can (15 oz) sliced peaches, drained and finely chopped
Directions:
Directions:
In a bowl, combine the dry ingredients. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick). Fold in peaches.
Fill paper-lined muffin cups 2/3 full. Bake at 350º for 25-30 minutes or until a toothpick comes out clean.
