"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 lb to 1 1/2 lbs hamburger meat
1 1/2 c brown gravy
3 c mashed potatoes
2 c shredded cheese
Pizza Dough

Directions:
Prepare your pizza dough as if for a regular pizza. If you are not using one of the pre-cooked kinds, pre-bake for just 5 mins (400 º or whatever the package says). Brown your hamburger and set aside. Make up the brown gravy. I use the store package mix and just add a little more water then is called for in the instructions. Mix the gravy and the hamburger then spread this out as your first layer on the pizza dough. Next comes the mashed potatoes. Just use standard mashed potatoes, again home made or store bought. These are a little tricky to spread out, but not impossible. Last, sprinkle on the cheese and bake. Again, either at 400 º or whatever is recommended for the pizza crust you purchased.

I didn't list the prep time as it depends on how much you make from scratch. I used to use a bread machine to make my pizza dough. If you do that and let it rise properly, you've just added 24 hours to your cooking time. If you use all pre-packaged ingredients, this is a 30 min deal. The neat thing about this recipe is you can dress it up as you like. Try adding things like cooked onions or peppers, some folks like mushrooms. It's a fun one to customize.
