1 1/4 - 1 1/2 Lbs pork lion

Glaze:
1 C (8oz) pineapple rings - reserve juices
1 t dry mustard
1/2 t ground ginger
1/2 t ground paprika
1 T brown sugar
1 T lemon juice
2 t cornstarch

Place loin on a rack in baking pan

Glaze:
Drain pineapple and reserve 1/2 of juice
In small saucepan mix 1/3 C juice, mustard, ginger, paprikea, brown sugar and lemon juice and cornstarch. Bring to boil and set aside.

Brush pork with glaze

Bake uncovered at º350 for 1 hour 15minutes until meat is at 160º internally. Turn pork 1-2 times glazing while cooking

Let pork rest for 5 minutes - Slice, garnish with rings and serve

Serve with rice
