1 6-8 lb. leg of lamb, boned & butterflied
Salt and pepper.
1 cup orange marmalade
1 cup dry red wine
2/3 cup chopped fresh mint leaves (can use dried only less)
4 tbl chives

Directions:
Directions:
Sprinkle inner surface of lamb with salt & pepper.

Combine next four ingredients. Soak lamb in marinade for several hours, turning occasionally.

Grill like steak, only coals should not be quite as hot, about 12 min. on each side. Brush sauce over while cooking. Meat should be served pink.
Serves 6-8
