1 cup water
1 cup bottled Italian dressing
2 cups Minute rice
1-2 cups frozen peas
1 cup cucumber, chopped
1-2 cups sliced fresh mushrooms
1/2 cup green onions, sliced
3-4 to 1-1/3 cups mayonnaise
1 cup water chestnuts

Directions:
Directions:
Bring water and Italian dressing to a boil. Add rice and cover; turn off heat and let sit for 25 minutes. Refrigerate and chill. Add remaining ingredients and chill for another two to six hours before serving.

Optional: add radishes and/or 1/2 to 1 cup slivered almonds.
