4 medium onions, chopped
3 cloves garlic, minced
2 tbsp olive oil
4 quarts peeled and quartered tomatoes
4 cans (6 oz) tomato paste
1 c fresh parsley
3 tbsp salt
3 tbsp sugar
4 tsp oregano
2 bay leaves

Directions:
Directions:
In a large pan, cook onions and garlic in oil until tender. Add remaining ingredients and simmer for 2-3 hours, depending on desired thickness.
Pour boiling hot mixture into clean, hot canning jars, leaving 1/2 inch head space. Adjust lids and process for 20 minutes in a boiling water bath.
